All our cheese and dairy products are made using milk from A2 cows, and in small batches. They are all handmade, not manufactured.

Hard cheeses are aged for an extended period of time in our cheese cave at the optimum temperature & high humidity.

A perfect balance of moisture and aridity, these cheeses provide a firm, slightly springy texture with a delicate blend of savoury and tangy flavours.

This range of cheese include:

  • Parmesan (Italian)

  • Cheddar (English)

  • Gruyère (Swiss)

  • Tomme (French)

  • Gouda (Dutch)

We also make variations of some of these cheese, infusing them with various herbs & spices such as Thyme, Rosemary, Wild Caraway, Capers, Saffrron, etc.

Semi-soft and soft cheese has a higher moisture percentage and a creamier profile. These cheese include:

  • Mozzarella (Italian)

  • Burrata (Italian)

  • Stracciatella (Italian)

  • Ricotta (Italian)

  • Halloumi (Cypriot)

  • Cream Cheese (USA)

Made with fresh, low heat pasteurized milk, these dairy products reflect the flavours of the season that the milk carries.
